What sets Des Haras apart from its neighbors — the local bars, the winstub-adjacent spots — isn't a signature cocktail or a clever concept. It's the room. The building, a former national stud farm, gives you ceiling height and raw timber that no amount of interior design budget could manufacture from scratch. The colombages outside are for the tourists walking toward les Ponts Couverts; in here, the bones are the real thing.
The kitchen works a seasonal French-Alsatian line with enough discipline to avoid the tourist-trap drift that catches a lot of places at this price point and visibility. The truffle knepfle — the dish that surfaces most in conversations after the meal — is a local staple handled with care rather than irony. Wines by the glass lean toward Alsatian producers, which sounds obvious but isn't always the case when a restaurant is filling tables with international visitors seven nights a week. Service is consistently flagged in reviews as genuinely attentive, even across full dining rooms and tables with kids — worth noting for a spot that could easily coast on atmosphere alone.
Honest caveats: the steak program can be uneven in its accompaniments, and you are paying for the setting as much as the plate. Reservations are non-negotiable, especially for the courtyard terrace.
