Le Fossile went the other direction: a focused lineup of beef cuts, serious attention to how they're cooked, and an onglet à l'échalote that people in this neighborhood still talk about on the walk home down rue de Zurich. That kind of focus is harder to pull off than it looks.
The onglet — hanger steak, for the uninitiated — is the thing to order. It comes tender and deeply flavored, draped in slow-caramelized shallots that sharpen rather than sweeten the beef.
