Le Bistrot d'Antoine

A spontaneous visit, without reservation, turned into a surprisingly assured and memorable meal. The restaurant presents itself with the confidence of a classic French bistrot, but what stood out most was not nostalgia or rustic charm. It was the kitchen’s restraint, clarity and technical control. We ordered the quenelles de brochet with sauce Nantua and rice pilaf, the quasi de veau with morel cream and vin jaune, the terrine de campagne with poultry livers, the gratinated beef bone marrow with toasted bread, and shared an île flottante with Bourbon vanilla for dessert. The starters immediately showed a disciplined hand. Both the terrine and the bone marrow are dishes that can easily become heavy, coarse or overly assertive. Here, they were handled with notable cleanliness. The terrine had depth without excessive liver intensity, and the seasoning was measured rather than corrective. The bone marrow was rich, as it should be, but not clumsy. Its fat carried a rounded savouriness that worked beautifully with wine, while the wine’s acidity and tannic structure brought the necessary lift and balance. The only reservation concerned the bread, which was firm rather than properly crisp, lacking the ideal contrast of a brittle exterior and a more yielding centre. The quenelles de brochet were one of the highlights of the meal. Their texture suggested careful handwork: elastic, delicate and finely judged, without the dull density that can sometimes affect this preparation. The sauce Nantua had real depth, with a persuasive shellfish character and a rounded savoury sweetness. It brought richness without heaviness, and it framed the quenelles very well. The accompanying rice, however, was less convincing. The choice of rice is interesting and not inappropriate, but its execution lacked fragrance, separation and precision. Against a sauce and quenelle of this quality, the rice felt comparatively ordinary and would benefit from more careful technique. The quasi de veau was equally strong. The veal itself was cooked with accuracy: tender, moist and still recognisably structured. Yet the centre of the dish was clearly the sauce. The combination of morels, vin jaune and cream was handled with admirable balance. It was aromatic and generous, but not heavy. The morels contributed both perfume and texture, while the pepper in the sauce was particularly well judged, adding length and definition rather than simple heat. The purée served alongside was smooth, careful and well integrated into the dish, acting less as a garnish than as a proper vehicle for the sauce. Dessert brought a light and elegant conclusion. The île flottante à la vanille Bourbon was successful precisely because it avoided excess sweetness. The vanilla sauce was smooth, soft and fragrant, with the comforting impression of melted vanilla ice cream, but in a lighter and more refined form. After a meal built around marrow, cream, morels and Nantua sauce, this was a well-chosen finish. The complimentary madeleines were also worth noting. They were not merely a polite gesture at the end of the meal, but genuinely well made: fragrant, balanced and superior to many commercially sold examples. Overall, this is a kitchen with a clear respect for traditional French bistrot cooking, but also with enough precision to avoid the heaviness that often accompanies such dishes. The strongest moments were the sauces, the handling of delicate textures, and the restraint shown with potentially rich ingredients. There are small technical points to refine, particularly the bread and rice, but the meal as a whole was coherent, generous and highly satisfying. A restaurant worth returning to — not for spectacle, but for flavour, technique and honest cooking. A confident and technically sound bistrot meal, with sauces of real merit and a commendable sense of restraint. Minor weaknesses in the supporting starches prevent full polish, but the kitchen shows clear skill, judgement and respect for the classical repertoire.
